Onion Torte a la Stargazers

There are many recipes for Zwiebelkuchen. This recipe is designed to accommodate the dietary preferences of as many people as possible.

1 loaf of frozen bread dough, defrosted. It must be a yeast dough

3 large onions, any color or a mix, chopped or pureed

4 ounces smoke flavored soybean “Fakin’ Bacon” (or genuine pork bacon)

Olive or vegetable oil

2 eggs

One-half cup yogurt

Allow bread to rise, then roll it out to cover a lightly greased jellyroll pan or cooky sheet with a slightly raised edge all around. If you prefer a thicker torte, put the dough in a smaller pan and raise the edge to be more like a quiche. Chop the “bacon” and brown in oil. (if using pork bacon you do not need oil) Add the onions and cook until soft and brown. Set aside to cool. In a separate bowl, beat eggs and mix in the yogurt. Add to the cooled onion mixture and spread it evenly over the dough. Bake at 380 degrees F for 25 minutes.
