Kale and Potato Soup
1 pound of kale-remove stems and cut into 1/4 inch ribbons
1 medium onion
2 garlic cloves chopped
3 T olive oil
1 pound of small red potatoes-1/2' diced
6 c. chicken or vegetable stock
1 t. salt
Crushed thyme, rosemary, sage, whole cloves, bay leaves, black pepper and cayenne to taste.
1/2 pound of sliced spicy sausage
Saute onion and garlic in olive oil in large sauce pan. Add kale, potatoes, seasoning and stock. Simmer until tender-45 minutes to one hour. Fry sausage, drain, and add to soup. Cook for 10 more minutes. Tastes especially good if served with cornbread.
